Apple Coating Ingredients:
2 Medium apples, peeled and diced
1/3 cup Granulated sugar
1 tbsp. Ground cinnamon
Cake Ingredients:
1 1/2 cup Gluten-free flour
1 cup Granulated sugar
4 tsp. Baking powder
1 1/4 cup Oat milk
1 tsp Vanilla
2 tbsp. Egg replacer + 4 tbsp water
1 cup Vegan butter, melted
Cinnamon-Swirl Ingredients:
1/2 cup Vegan butter, melted
2/3 cup Light brown sugar
2 tbsp Ground cinnamon (yes, tablespoons)
Icing Ingredients:
1 cup Powdered sugar
1/8 cup Oat milk
Steps:
Preheat the oven to 350°F.
2. a) To make the apple coating, in a small bowl whisk together granulated sugar and ground
cinnamon.
b) Peel both apples and cut into small cubes.
c) Add them to the cinnamon-sugar bowl and evenly coat the diced apples.
3. a) To make the cake, in a medium bowl whisk together the dry ingredients; gluten-free flour,
granulated sugar, and baking powder.
b) In the same bowl, combine the wet ingredients; oat milk, vanilla, egg replacer slurry, and
vegan butter.
c) Whisk to make a cake batter consistency.
d) Fold the apple cinnamon-sugar cubes into the cake batter, until evenly distributed.
e) In a 9x9 pan, pour the apple cake mix evenly.
4. a) To make the cinnamon-swirl, in a small bowl, combine vegan butter, light brown sugar, and
ground cinnamon.
b) Using a spoon, dollop the cinnamon-swril mixture over top the cake.
c) Have fun trying to make patterns!
5. Place the cake in the oven for 45 minutes, until a toothpick comes out clean.
6. Once cooked, take the cake out of the oven to cool for 10 minutes.
7. While the cake is cooling, make the icing in a small bowl, whisking together powdered sugar
and oat milk. Drizzle over the cake.
