Banana Oatmeal Pancakes

Single serving: Makes 3 pancakes


Ingredients:

1 Banana (best if has brown spots)

¼ cup Oat milk

1 tsp Vanilla extract

¾ cup Oats

1 tsp Baking powder

¼ tsp Cinnamon (can be replaced with honey)

Hint of salt

Olive oil (for cooking)


Steps:

  1. In a blender, add oats and blend into a flour texture.

  2. In the same blender, add the remaining ingredients and blend until a pancake consistency.

  3. Lightly coat griddle or stove pan with olive oil set to low heat.

  4. Add roughly ⅓ cup of batter.

  5. Flip once bubbles form around edges.
