Bell Pepper Nachos | 6-Food Elimination Diet for EoE

Or stuffed bell peppers? Call them what you want but they have perfect crunch and are free from the top 8 allergens. Taco meat is an easy meal prep item to reuse and reheat for creative meals. Have leftovers from taco night? Stuff them into mini sweet bell peppers and add any toppings you desire. I sprinkled some shredded lettuce and scooped Trader Joe's salsa on top, but you can add guac, dairy-free cheese, tomatoes, or any of your favorite taco toppings!

Ingredients:

1 lb. Ground turkey, or meat of choice

1/2 Medium white onion, diced

1 lb. Mini sweet peppers

Toppings! (lettuce, onion, salsa, dairy-free cheese, tomatoes, guac, etc.)


Steps:

  1. In a medium pan, brown your ground meat over the stove and follow the steps on the taco seasoning packet. Of course, you can add your own seasonings based on preference.

  2. While the meat is cooking, dice half of an onion. Also, cut mini sweet peppers in a half and scoop out seeds.

  3. Add diced onion to browning meat, stir to mix.

  4. On a plate, scoop a spoonful of meat into the hallowed sweet peppers. Repeat until you have filled as many peppers as desired.

  5. Add toppings of choice.
