Vegan Gluten-Free Apple Cinnamon Muffins/Bread

Makes 12 muffins or one loaf


Ingredients:

Cinnamon Swirl

2 tbsp Brown Sugar

3/4 tsp Ground Cinnamon

Apple Bread

2 tbsp Ground flax seeds

6 tbsp Water

*can skip flax seeds and water if in a pinch

2 tsp Baking powder

1 1/4 tsp Ground cinnamon

1/2 tsp Ground nutmeg

1/2 tsp Salt

1/3 cup Sugar

1 cup Unsweetened applesauce

1/3 cup Coconut oil or vegan butter, melted

2 tsp Vanilla extract

1 cup Chopped apples (optional)


Steps:

  1. Preheat oven to 325°F and grease the muffin tin or loaf pan

  2. Mix together brown sugar and cinnamon to make the cinnamon swirl and set aside.

  3. In a small bowl, whisk together ground flax seeds and water., then set aside to thicken.

  4. In a large bowl, whisk the flour, baking powder, cinnamon, nutmeg, and salt together.

  5. In a small bowl, mix the sugar, applesauce, melted coconut oil, vanilla, and flax mixture together.

  6. Pour wet ingredients into dry ingredients and mix well to combine.

  7. Fold in the chopped apples.

  8. Pour the batter halfway into muffin tins or pour half of the batter into loaf pan.

  9. Sprinkle cinnamon swirl mixture evenly on top of batter.

  10. Pour the remaining batter on top of the cinnamon swirl layer.

  11. Bake for 25 minutes for muffins, 50-55 minutes for bread.

  12. Allow the loaf to fully cool before slicing.
